Sweet-and-Sour Chicken and Veggies

There’s nothing new about a dinner comprised of chicken and vegetables. However, this recipe uses a slow cooker to slowly infuse flavor into the dish, making it more delicious than any chicken-and-veggies meal you’ve ever had.

Ingredients:
  • ½ c. honey
  • ½ c. low-sodium soy sauce
  • 2 cloves garlic
  • 1 tsp. fresh ginger, minced
  • ½ tsp. paprika
  • 1 tbsp. olive oil
  • ¼ tsp. red pepper flakes
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 c. onions, chopped
  • 2 boneless, skinless chicken breasts
  • 2 c. mixed veggies of your choice

  1. In a bowl, whisk together the honey, soy sauce, garlic, ginger, paprika, olive oil, red pepper flakes, salt, and pepper.
  2. Add in the onions and chicken breasts, and toss to coat. Pour into a large sealable freezer bag, and freeze until ready to cook.
  3. When ready to prepare, place the mixture into a slow cooker, and cook on high for 4 hours or on low for 8 hours. *Halfway through cooking, remove the chicken, shred, and return to the slow cooker.
  4. Add the mixed veggies to the slow cooker 25–30 minutes before the timer is done. Serve once the veggies are cooked through.
  5. Serves 2
