Simple and Scrumptious Slow-Cooker Meals
Sweet-and-Sour Chicken and Veggies
There’s nothing new about a dinner comprised of chicken and vegetables. However, this recipe uses a slow cooker to slowly infuse flavor into the dish, making it more delicious than any chicken-and-veggies meal you’ve ever had.
Ingredients:
- ½ c. honey
- ½ c. low-sodium soy sauce
- 2 cloves garlic
- 1 tsp. fresh ginger, minced
- ½ tsp. paprika
- 1 tbsp. olive oil
- ¼ tsp. red pepper flakes
- 1 tsp. salt
- 1 tsp. pepper
- 1 c. onions, chopped
- 2 boneless, skinless chicken breasts
- 2 c. mixed veggies of your choice

- In a bowl, whisk together the honey, soy sauce, garlic, ginger, paprika, olive oil, red pepper flakes, salt, and pepper.
- Add in the onions and chicken breasts, and toss to coat. Pour into a large sealable freezer bag, and freeze until ready to cook.
- When ready to prepare, place the mixture into a slow cooker, and cook on high for 4 hours or on low for 8 hours. *Halfway through cooking, remove the chicken, shred, and return to the slow cooker.
- Add the mixed veggies to the slow cooker 25–30 minutes before the timer is done. Serve once the veggies are cooked through. Serves 2
