Blood Orange and Beet Salad with Citrus Aioli

This is an eye-catching and mouth-watering salad with no cooking required! Beets are incredibly delicious either raw or cooked, and, when finely shaved, add a sweet crunch to compliment the tangy blood oranges.

It’s perfect for lunch or an easy dinner when you’re strapped for time. Pair this as a side salad with your favorite fish for a heartier meal sure to leave you full and satisfied.

Serves 2

Ingredients for aioli:
  • 1 lemon, juiced and zested
  • ¼ c. nonfat Greek yogurt
  • ½ c. low-fat mayonnaise
  • 1 tsp. capers
  • 1 garlic clove, minced
  • 1 tsp. chives, minced


Ingredients for salad:
  • 1 blood orange, peeled and cut into segments
  • 3 beets, peeled and thinly shaved
  • 1 c. arugula
  • 2 tbsp. hazelnuts, crushed

  1. In a large bowl, whisk together lemon juice, zest, yogurt, mayonnaise, capers, garlic, and chives until blended. Keep refrigerated until ready to serve.
  2. Toss orange segments, beets, and arugula in a large bowl. Drizzle with aioli and sprinkle with hazelnuts before serving.
