Vegan Sloppy Joes

If you’re a fan of the traditional sloppy joe, you won’t be able to resist this delicious vegan version that swaps out beef for nutritious lentils, seitan, and chopped veggies.

Serves 4

Ingredients:
  • 1 tbsp. olive oil
  • ¼ c. yellow onions, peeled and minced
  • 2 garlic cloves, peeled and minced
  • ½ c. green bell peppers, chopped
  • 1 c. lentils, cooked
  • 1 c. seitan, chopped
  • 1½ tsp. salt
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1 (15 oz.) can tomato sauce
  • 2 tbsp. vegan Worcestershire sauce
  • 2 tbsp. brown sugar
  • 2 tbsp. ketchup
  • 1 tsp. hot sauce
  • 4 hamburger buns
Toppings:
  • Vegan cheese
  • Yellow onions, sliced
  • Pickles

Instructions:
  1. In a medium saucepot, heat oil over medium-high heat. Sauté onions, garlic, and peppers for 3 minutes or until tender. Stir in lentils, seitan, salt, chili powder, cumin, paprika, tomato sauce, Worcestershire sauce, brown sugar, ketchup, and hot sauce. Reduce heat, cover, and cook for 15 minutes until the mixture reaches a sloppy joe consistency.
  2. Serve the mixture on hamburger buns with vegan cheese, onions, and pickles.
