Pesto-Parmesan Sweet Potato Toasts

Ingredients:
- 2 sweet potatoes, sliced lengthwise
- 1 tbsp. olive oil
- ¼ tsp. salt
- ⅛ tsp. black pepper
Toppings:
- ⅛ c. prepared pesto
- ⅛ c. grated Parmesan cheese
- ¼ c. sun-dried tomatoes, diced
- 4 eggs, soft-boiled and peeled
- Fresh basil leaves, for garnish

- Preheat the oven to 400°F.
