Pesto-Parmesan Sweet Potato Toasts

Sweet potato toast has trended as a breakfast item for the past few years—and for good reason. Sweet potatoes are a nutritious and filling veggie that pair well with a variety of flavors, textures, and toppings. Just see for yourself how amazingly versatile they can be!

Serves 4

Ingredients:
  • 2 sweet potatoes, sliced lengthwise
  • 1 tbsp. olive oil
  • ¼ tsp. salt
  • ⅛ tsp. black pepper
Toppings:
  • ⅛ c. prepared pesto
  • ⅛ c. grated Parmesan cheese
  • ¼ c. sun-dried tomatoes, diced
  • 4 eggs, soft-boiled and peeled
  • Fresh basil leaves, for garnish

Instructions:
  1. Preheat the oven to 400°F.
  2. Place sliced sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 15 minutes or until sweet potatoes are cooked and slightly firm.
  3. Top sweet potato slices with pesto, Parmesan, sun-dried tomatoes, and eggs before serving. Garnish with fresh basil leaves.
