One Delicious Picnic
Summer Succotash
The best flavors of summer are alive and well in this simple succotash dish that is sure to bring a pop of color to any picnic table!
Ingredients:
- 1 tbsp. olive oil
- 1 garlic clove, minced
- 1 c. lima beans
- 1 c. green beans, chopped
- 1 c. snap peas
- 1 c. corn
- 1 c. baby heirloom tomatoes, halved
- ½ c. red onions, diced
- 1 tbsp. basil, chopped
- ½ tbsp. dill, chopped
- 1 tsp. salt
- ½ tsp. black pepper

- Heat oil in a large skillet over medium-high heat. Sauté the garlic, lima beans, green beans, snap peas, corn, tomatoes, and red onions for 5–6 minutes or until tender.
- Place the succotash in a bowl and season with basil, dill, salt, and pepper before serving. Serve hot or cold. Serves 4
