The best flavors of summer are alive and well in this simple succotash dish that is sure to bring a pop of color to any picnic table!

Ingredients:
  • 1 tbsp. olive oil
  • 1 garlic clove, minced
  • 1 c. lima beans
  • 1 c. green beans, chopped
  • 1 c. snap peas
  • 1 c. corn
  • 1 c. baby heirloom tomatoes, halved
  • ½ c. red onions, diced
  • 1 tbsp. basil, chopped
  • ½ tbsp. dill, chopped
  • 1 tsp. salt
  • ½ tsp. black pepper


Print Recipe
  1. Heat oil in a large skillet over medium-high heat. Sauté the garlic, lima beans, green beans, snap peas, corn, tomatoes, and red onions for 5–6 minutes or until tender.
  2. Place the succotash in a bowl and season with basil, dill, salt, and pepper before serving. Serve hot or cold.
  3. Serves 4

Avocado-Cilantro Deviled Eggs

It’s hard to imagine a picnic spread without deviled eggs, but if you’re really looking to impress, there are plenty of ways you can spice up this classic—including this recipe, which incorporates avocado for a slightly healthier twist.

Ingredients:
  • 6 large eggs, hard-boiled and halved
  • 1½ avocados, peeled and diced
  • ¼ c. low-fat sour cream or mayonnaise
  • 2 tbsp. cilantro
  • ½ tsp. black pepper
  • ½ tsp. salt
  • ½ tsp. celery salt
  • One lime, zested, juice of ½
  • Cilantro, for garnish
  • Lime wedge, for garnish
  • Paprika, for garnish


Print Recipe
  1. Cut the hard-boiled eggs in half. Add the yolks to a blender, and set the whites aside.
  2. Add avocado to the blender, and mix.
  3. Add in the sour cream or mayonnaise, cilantro, black pepper, salt, and celery salt.
  4. Zest the lime, and add the zest and juice from half the lime to the blender. Blend until smooth.
  5. Fill a piping bag with the mixture, and pipe a small amount into the center of each egg.
  6. Garnish with cilantro, a lime wedge, and a sprinkle of paprika.
  7. Makes 12 deviled eggs
