One Delicious Picnic
Avocado-Cilantro Deviled Eggs
It’s hard to imagine a picnic spread without deviled eggs, but if you’re really looking to impress, there are plenty of ways you can spice up this classic—including this recipe, which incorporates avocado for a slightly healthier twist.
Ingredients:
- 6 large eggs, hard-boiled and halved
- 1½ avocados, peeled and diced
- ¼ c. low-fat sour cream or mayonnaise
- 2 tbsp. cilantro
- ½ tsp. black pepper
- ½ tsp. salt
- ½ tsp. celery salt
- One lime, zested, juice of ½
- Cilantro, for garnish
- Lime wedge, for garnish
- Paprika, for garnish

- Cut the hard-boiled eggs in half. Add the yolks to a blender, and set the whites aside.
- Add avocado to the blender, and mix.
- Add in the sour cream or mayonnaise, cilantro, black pepper, salt, and celery salt.
- Zest the lime, and add the zest and juice from half the lime to the blender. Blend until smooth.
- Fill a piping bag with the mixture, and pipe a small amount into the center of each egg.
- Garnish with cilantro, a lime wedge, and a sprinkle of paprika. Makes 12 deviled eggs
