Lemon Poppy Thyme Muffins

These lemon poppy thyme muffins are the perfect quick and healthy breakfast option. They are made with wholesome ingredients, like almond flour, and raw honey for sweetness, so you can satisfy your morning sweet tooth without the guilt.

Makes 6 large muffins or 12 small muffins

Ingredients:
  • 1 c. almond flour
  • ⅛ tsp. baking powder
  • ⅛ tsp. salt
  • 2 tbsp. raw honey
  • ½ c. coconut milk
  • 2 tbsp. coconut oil, melted
  • 1 tsp. vanilla extract
  • 1 egg
  • 2 lemons, zested
  • 1 tbsp. fresh thyme
  • 1½ tbsp. poppy seeds

Instructions:
  1. Preheat oven to 350°F.
  2. In a large bowl or electric mixer fitted with a whisk attachment, whisk together almond flour, baking powder, and salt. Add in honey, coconut milk, coconut oil, vanilla, egg, lemon zest, thyme, and poppy seeds, and continue to whisk until blended.
  3. Grease a muffin tin with nonstick cooking spray, and line with muffin cups. Evenly fill cups ¾ of the way full, and bake for 30 minutes or until muffins are cooked completely. (Test muffin center with a toothpick—if the toothpick comes out clean, the muffins are done.) Let rest for 1 hour before serving.
