In many parts of the world, rice is the perfect base for a meal any time of day—including breakfast. It’s full of healthy carbohydrates to give you necessary energy first thing in the morning, and the salmon and eggs in this dish provide plenty of protein.

Serves 4

Sesame Nori Crunch:
  • 1 tbsp. vegetable oil or coconut oil
  • ⅛ c. maple syrup
  • ⅛ c. brown rice syrup
  • ¾ c. sesame seeds
  • 1 tsp. soy sauce
  • 3 nori sheets, roughly chopped
Rice:
  • 2 c. short grain rice
  • 1 tbsp. rice vinegar
  • 1 (1.5 oz.) packet instant miso soup mix
Toppings:
  • 4 oz. smoked salmon
  • ½ c. radish, sliced
  • ¼ c. scallions, chopped
  • 4 eggs, soft-boiled

Instructions:
  1. Preheat oven to 350°F.
  2. In a medium saucepan, bring oil, maple syrup, and rice syrup to a simmer. Stir in sesame seeds, soy sauce, and nori.
  3. Spread mixture over a parchment-lined cookie sheet, and bake for 10 minutes. Let cool for 30 minutes or until hardened, and break into pieces. Set aside until ready to serve.
  4. Bring 4 cups of water to a boil over medium-high heat. Stir in rice, vinegar, and miso soup mix. Cook for 20 minutes or until rice is fluffy and sticky and liquid has been completely absorbed. Alternatively, cook rice with additional ingredients in a rice cooker using manufacturer’s instructions.
  5. To serve, top cooked rice with salmon, radishes, scallions, and soft-boiled egg. Add sesame nori crunch before serving.
