Tex-Mex Turkey Burgers

If you’re looking for a way to keep the same great taste of the burgers you love without overindulging, this recipe eliminates the bun and swaps out beef for turkey (a slightly leaner meat)—and it’s just as delicious!

Burgers:
  • 1½ lb. ground turkey
  • 3 garlic cloves, minced
  • 1 tsp. cumin
  • 1 tbsp. chipotle peppers in adobo, minced
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 8 Bibb lettuce leaves (for the bun)
Sauce:
  • 1 egg yolk
  • 1 tsp. Dijon mustard
  • ¼ tsp. salt
  • 2 tsp. chipotle peppers in adobo, minced
  • 1 tsp. lime juice
  • ½ c. avocado oil or olive oil
  • 1 tbsp. fresh chives, chopped
Toppings:
  • 1 tomato, sliced
  • ½ c. red onions, peeled and sliced
  • 1 avocado, peeled and sliced
  • 1 jalapeño, sliced
  • ¼ c. cilantro leaves

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, season the ground turkey with garlic, cumin, chipotle peppers, salt, and pepper. Work the seasoning into the turkey using your hands, and form even patties.
  3. Grill the patties for 6–8 minutes, flipping halfway through or until they are cooked thoroughly. Let rest for 5 minutes before serving.
  4. In a medium bowl, whisk together the egg yolk, Dijon mustard, salt, chipotle peppers in adobo, and lime juice. While whisking, pour in the oil slowly and in a fine stream until the sauce is slightly thick and blended, and then whisk in the chives. Keep refrigerated until ready to serve.
  5. Top lettuce leaves with tomatoes, red onions, and avocado. Place the burgers on top, drizzle with the sauce, and add jalapeño slices and cilantro before serving.
  6. Makes 4 large patties or 8 small patties
