Healthy and Hearty Bowls at Home
California Chicken Salad Bowl
Why This Recipe Works You can put avocado on just about anything and call it “California.” We wanted to earn our West-Coast cred with a healthy and hearty salad that paid respect to the Golden State in every bite. A California bowl should burst with fresh flavors, so we went heavy on the green veggies, while thinly sliced radishes offered a pop of color. To balance all the vegetal flavors, we added a handful of sweet grapes (think Napa Valley). Just when we thought we hit all the points, we realized we were missing something quintessentially Californian: a light, fluffy mound of alfalfa sprouts.
Ingredients:
- 4 oz. (4 c.) baby spinach
- 1 scallion, sliced thin
- ½ c. creamy avocado dressing, divided
- 2 c. chopped cooked chicken
- 4 oz. seedless grapes, halved (¾ c.)
- 2 oz. sugar snap peas, strings removed, halved
- 4 radishes, trimmed, halved, and sliced thin
- 1 oz. (½ c.) alfalfa sprouts

- Toss spinach and scallion with half of dressing to coat, then season with salt and pepper to taste.
- Divide among individual serving bowls, then top with chicken, grapes, snap peas, and radishes.
- Drizzle with remaining dressing and top with alfalfa sprouts. Serve.
