It’s a Pizza Party!

Pizza is great anytime of year—and some would say anytime of day—but once the days get shorter and the nights get cooler, it seems to hit the spot even more. So to honor the dish and celebrate the season, here’s a trio of tasty autumn-inspired pizza recipes that you’ll surely fall for.

Crust instructions:
Each recipe requires a 12-ounce pizza dough ball and 1 tablespoon of olive oil. To make the crust, roll the pizza dough out into a 12-inch circle, about ½ inch thick, on lightly floured parchment paper, and brush with oil.

Pizza baking instructions:
Once you've added toppings to your pizza, transfer it with parchment onto a pizza stone or baking sheet. Bake at 450°F for 18–20 minutes or until the crust is golden brown and the cheese is bubbling. Remove the pizza from the oven, and place on a cutting board. Cool slightly before cutting.

Harvest Fruits Pizza

With onions, butternut squash, and apple slices aplenty, this vegetarian version is a perfect autumn pie.

Ingredients:
  • 1 small butternut squash (about 2 cups), peeled and cubed
  • ½ medium red onion, sliced
  • 2 tbsp. olive oil, divided (1 tbsp. for coating fruits, 1 tbsp. for crust)
  • Pinch of salt and pepper
  • 1½ c. Colby-Monterey Jack cheese, shredded
  • ⅓ c. blue cheese, crumbled
  • ½ medium apple, thinly sliced


Print Recipe
  1. Preheat oven to 400°F.
  2. Combine the butternut squash, onions, 1 tablespoon of oil, salt, and pepper on a baking sheet, and spread out mixture evenly. Bake for 18–20 minutes or until squash is soft, stirring once halfway through. Remove from oven.
  3. Increase heat to 450°F. Make crust as instructed above. Spread the butternut squash mixture to within 1 inch of the edge. Top with the cheeses and apple slices, and bake as instructed above.
  4. Serves 8

Sweet-and-Salty Apple Bacon Pizza

Apple and bacon make for an unbeatable sweet-and-salty combination atop this pie.

Ingredients:
  • ½ tbsp. butter
  • ½ medium red onion, sliced
  • 1½ c. shredded mozzarella cheese
  • ⅔ c. blue cheese, crumbled
  • 1 small sweet-tart apple (e.g., Honeycrisp, Jazz, or Pink Lady), cored and thinly sliced
  • 4 slices cooked bacon, chopped
  • 2 tbsp. fresh thyme


Print Recipe
  1. Preheat oven to 450°F.
  2. In a small sauté pan, heat the butter over medium heat. Add the onion slices, and stir until they are soft and have a caramel color. Remove from heat, and set aside.
  3. Make crust as instructed above. Sprinkle the pizza dough with mozzarella cheese and blue cheese. Top with sliced apples, chopped bacon, caramelized onions, and thyme. Bake as instructed above.
  4. Serves 8

Extra Cheesy Short Ribs Pizza

You may have tried all-meats pizzas, but you’ve never tasted a meat-and-cheese pizza like this.

Ingredients:
  • Short ribs (reserve juice)
  • Salt and pepper, to taste
  • ½ tbsp. butter
  • ½ white onion, sliced into ¼-inch-thick rings
  • 2 c. shredded mozzarella cheese
  • ¾ c. ricotta cheese
  • ½ c. shredded white cheddar
  • 8 oz. brie, cut into squares with rind

  1. Make the short ribs using this recipe. Remove from the Dutch oven, and pull the meat off the bone, removing the fat. If there is excess fat on the top of the braising liquid, use a baster to remove it. If juice is too thin, put it on the stove over medium to medium-high heat, and reduce the liquid. Season with salt and pepper to taste after reducing the liquid.
  2. Preheat oven to 450°F. In a small sauté pan, heat butter over medium heat, add the onion slices, and stir until they are soft and have a caramel color. Remove from heat, and set aside.
  3. Make crust as instructed above. Cover the pizza dough with the short rib braising juice for the sauce. Sprinkle with mozzarella, and then spread ricotta across the pizza. Distribute chunks of short rib meat, then white cheddar and brie. Spread the caramelized onions across the pizza. Bake as instructed above.
  4. Serves 8
