  1. Preheat oven to 350°F.
  2. In a small saucepan, simmer apple cider on low to medium heat for 15–20 minutes. Allow it to cool in the refrigerator.
  3. Spray a doughnut pan with nonstick spray.
  4. Prepare the crumb topping by stirring together ½ cup flour, ½ cup brown sugar, ⅛ teaspoon of salt, and 3 tablespoons butter with a fork until crumbs form, and set aside.
  5. Toss the remaining 2 cups flour, baking powder, baking soda, cinnamon, cloves, and ¼ teaspoon of salt together in a large bowl. In another bowl, whisk together the egg, remaining 2 tablespoons melted butter, remaining ½ cup brown sugar, and granulated sugar until smooth. Whisk in the buttermilk, vanilla, diced apples, and apple cider, and set aside.
  6. Pour the wet ingredients into the dry ingredients, and very gently whisk together. (Some small lumps may remain, which is all right.)
  7. Fill the cavities of the pan with doughnut batter so that each is about ¾ of the way full. Sprinkle the crumb topping evenly onto the batter, and bake for 9–10 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the doughnuts to cool in the pan for 5–10 minutes, and then transfer to a wire rack or serving tray.
  9. Serves 6
