- Preheat oven to 350°F.
- In a small saucepan, simmer apple cider on low to medium heat for 15–20 minutes. Allow it to cool in the refrigerator.
- Spray a doughnut pan with nonstick spray.
- Prepare the crumb topping by stirring together ½ cup flour, ½ cup brown sugar, ⅛ teaspoon of salt, and 3 tablespoons butter with a fork until crumbs form, and set aside.
- Toss the remaining 2 cups flour, baking powder, baking soda, cinnamon, cloves, and ¼ teaspoon of salt together in a large bowl. In another bowl, whisk together the egg, remaining 2 tablespoons melted butter, remaining ½ cup brown sugar, and granulated sugar until smooth. Whisk in the buttermilk, vanilla, diced apples, and apple cider, and set aside.
- Pour the wet ingredients into the dry ingredients, and very gently whisk together. (Some small lumps may remain, which is all right.)
- Fill the cavities of the pan with doughnut batter so that each is about ¾ of the way full. Sprinkle the crumb topping evenly onto the batter, and bake for 9–10 minutes or until a toothpick inserted in the center comes out clean.
- Allow the doughnuts to cool in the pan for 5–10 minutes, and then transfer to a wire rack or serving tray. Serves 6
