Biscotti for Days

The holidays are a time dedicated to spending quality time with loved ones, and what better way to celebrate than with great food around the table? These three biscotti variations are sure to make any holiday brunch festivity a scrumptious success.

Biscotti

Biscotti Base
  • 3½ c. flour
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • 1½ c. sugar
  • 8 tbsp. unsalted butter, room temperature
  • 1 tsp. vanilla extract
  • 3 eggs, room temperature
Instructions
  1. Preheat oven to 350°F, and line a baking sheet with parchment paper.
  2. Sift the flour, baking powder, and salt into a bowl.
  3. In a second bowl, mix the sugar, butter, and vanilla extract. Beat the eggs in one at a time. Carefully add in the flour mixture, and stir.
  4. Dust your hands with flour, and divide the dough in half. Shape each portion into a 12 in. x 4 in. log, and place on the baking sheet.
  5. Bake for 25–30 minutes, or until lightly browned. Remove from the oven, and place on a wire rack to cool for about 30 minutes.
  6. Once cooled, use a serrated knife to cut ½-inch-wide slices at a slight angle. Place the sliced biscotti onto the baking sheets cut side down. Bake for an additional 10–12 minutes.
  7. Transfer biscotti to a wire rack to cool completely.

Biscotti

Classic Almond
  • 1 tbsp. almond extract
  • 1 c. toasted almond slices

Instructions
  1. Add the almond extract in with step 3.
  2. After combining the wet and dry ingredients, fold in the almond slices. Continue with step 4 of the biscotti base.

Biscotti

Cranberry-Orange
  • ⅓ c. dried cranberries
  • ¾ c. white chocolate chips
  • 1 tbsp. orange zest
  • White chocolate (for drizzling)

Instructions
  1. After combining the wet and dry ingredients, fold in the cranberries, white chocolate, and orange zest, and continue to step 4 of the biscotti base.
  2. Once the biscotti have completely cooled, melt more white chocolate and drizzle over the biscotti.

Biscotti

Hazelnut-Mocha
  • 1 tbsp. cocoa powder
  • 1 tsp. instant coffee
  • 2 tbsp. hot water
  • Chocolate, for dipping
  • Hazelnuts, crushed

Instructions
  1. Add the cocoa powder with the dry ingredients in step 2.
  2. Mix together the instant coffee and hot water until dissolved, and add into wet ingredients in step 3 before adding the eggs.
  3. Once the biscotti have completely cooled, melt the chocolate and dip each piece. Before the chocolate hardens, sprinkle each piece with crushed hazelnuts.
