Cookie Ice Cream Sammies

Milk and cookies is an undeniably perfect combination, but cookies and ice cream? Even better! These easy ice cream sandwiches make for a delightful treat any time of day, and they’re super fun to make and customize to your liking, too.

Ice cream sandwiches
  • 12 large cookies, desired flavors
  • 3 pints of assorted ice cream flavors, softened
  • Toppings of your choice (e.g., sprinkles, crushed cookies, mini chocolate chips)
Chocolate coating
  • 2 cups semisweet chocolate chips
  • ⅔ cup coconut oil


  1. Lightly grease a parchment-lined sheet pan (small enough to fit in your freezer) with pan release spray, and arrange 6 cookies, bottoms facing up.
  2. Scoop softened ice cream of your choice onto each cookie, and top with another cookie to make a sandwich, pressing down gently. Smooth ice cream on the sides with the back of spoon to make it even with the cookie edge.
  3. Place the sheet pan into the freezer, and let set for 1–2 hours or until ice cream has hardened.
  4. Using a double boiler or microwaving in short increments, melt chocolate and coconut oil together, whisking until smooth. Keep chocolate warm until ready to dip sandwiches.
  5. Dip sandwiches into the chocolate, coating half of each sandwich, and let any excess chocolate drip off. Sprinkle the chocolate with desired toppings before it hardens. Return to the freezer, and freeze for 10–15 minutes or until chocolate has hardened.
