Blueberry, Lemon, and Vanilla Crumble

Is there anything better than the combination of blueberry and lemon? This incredible crumble is so full of flavor you won’t even need a dollop of cream—though no one would blame you for adding it anyway.

Ingredients:
  • 5 c. frozen blueberries
  • 2 tbsp. honey
  • Zest of 1 lemon and juice of ½ of lemon
  • 1 vanilla pod, halved and seeds scraped out

For the topping:
  • 3½ tbsp. butter, cubed
  • 1 c. plain flour
  • ⅓ c. light brown sugar
  • ¼ c. jumbo oats
  • ¼ c. cornflakes


  • Ice cream (optional)
  • Custard (optional)
  • Greek yogurt (optional)
  • Heavy cream (optional)


Print Recipe
  1. Preheat the oven to 350°F. Mix together the blueberries, honey, lemon zest and juice, and vanilla pod and seeds and pour into a baking dish roughly 10 x 6 inches. Set aside.
  2. For the topping, rub the butter into the flour and sugar until it resembles breadcrumbs (alternatively, do this in a food processor). Stir in the oats and cornflakes. Scatter all over the top of the blueberry mixture and bake for 30–35 minutes, or until golden brown all over and bubbling underneath.
  3. Serve with ice cream, custard, Greek yogurt or heavy cream, if you wish.
  4. Serves 6
