A Table Full of Thanks
Farro Forager Stuffing
Looking to limit some of the starches on your Thanksgiving table? This stuffing recipe replaces bread with farro—a fiber-rich ancient grain—without sacrificing the aromatic herbs and decadent flavors typically found in stuffing.
Ingredients:
- 1 tbsp. olive oil
- 1 yellow onion, peeled and minced
- ½ c. celery, minced
- 1 c. wild mushroom mix, chopped
- ¼ c. white wine
- ¼ c. chicken or turkey broth
- 1½ tsp. salt
- ½ tsp. black pepper
- 1 tsp. sage, chopped
- ¼ tsp. ground nutmeg
- ½ tsp. thyme, chopped
- ½ tsp. rosemary, chopped
- 3 c. farro, cooked

- Heat oil in a large skillet over medium-high heat. Sauté onions and celery for 2–3 minutes or until tender and translucent.
- Stir in mushrooms, and deglaze the pan with wine. Stir in broth, salt, pepper, sage, nutmeg, thyme, rosemary, and farro.
- Cook for 5–6 minutes, and serve. Serves 6–8
