Farro Forager Stuffing

Looking to limit some of the starches on your Thanksgiving table? This stuffing recipe replaces bread with farro—a fiber-rich ancient grain—without sacrificing the aromatic herbs and decadent flavors typically found in stuffing.

Ingredients:
  • 1 tbsp. olive oil
  • 1 yellow onion, peeled and minced
  • ½ c. celery, minced
  • 1 c. wild mushroom mix, chopped
  • ¼ c. white wine
  • ¼ c. chicken or turkey broth
  • 1½ tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. sage, chopped
  • ¼ tsp. ground nutmeg
  • ½ tsp. thyme, chopped
  • ½ tsp. rosemary, chopped
  • 3 c. farro, cooked

  1. Heat oil in a large skillet over medium-high heat. Sauté onions and celery for 2–3 minutes or until tender and translucent.
  2. Stir in mushrooms, and deglaze the pan with wine. Stir in broth, salt, pepper, sage, nutmeg, thyme, rosemary, and farro.
  3. Cook for 5–6 minutes, and serve.
  4. Serves 6–8
