A spread of snacks, drinks, and treats is the perfect opportunity to impress your guests—and fill their bellies with something other than chocolate and candy corn. From finger foods to after-dinner desserts, these eats are scary delicious!

Candy Corn Quesadillas

They might look like the classic Halloween treat, but they’re actually an amazing cheesy appetizer—great for dipping in salsa or guacamole.

Ingredients
  • 1 rotisserie chicken, cut up
  • 1 (16-ounce) jar salsa
  • 1 cup frozen corn, thawed
  • ¼ cup barbecue sauce
  • ½ teaspoon ground cumin
  • Butter, for greasing pan
  • 8 (10-inch) flour tortillas
  • 1 jar salsa con queso dip, warmed
  • 4 cups shredded Mexican cheese blend
  • 2⅔ cups crushed nacho-flavored tortilla chips
  • ½ cup sour cream

Print Recipe
  1. In a large pot, combine the chicken, salsa, corn, barbecue sauce, and cumin until heated through, stirring occasionally. Place a pat of butter in a heated pan, and let melt.
  2. Place one tortilla in a large skillet, buttered side down, and then spread evenly with 1 cup of the chicken mixture. Fold the tortilla over, and press down. Cook over medium heat 1–2 minutes or until golden brown, and then flip to cook the other side.
  3. Spread ½ cup of the queso dip over the quesadilla, and carefully sprinkle cheese along the outer edge. Cook, covered, 1–2 minutes or until cheese is melted.
  4. Remove to a cutting board, and sprinkle crushed chips over the queso dip. Cut the quesadilla into six wedges, and place a small dollop of sour cream at the point of each wedge. Repeat with remaining ingredients.
